Foodservice Trends in Healthcare

Last year, the healthcare foodservice market represented $28 billion in operator sales.


Already a substantial figure, hospitals are set to grow by more than 3%, long-term care is set to increase by 2% and senior-living should see a 6% growth. Currently, hospitals account for half of the foodservice market in this segment, with senior-living and long-term care facilities representing a quarter each of total operator sales. However, the entrance of baby boomers is encouraging this segment’s growth and demanding major changes to the segment’s foodservice operations.

Fifty-four percent of hospital foodservice operators report that a primary mission is elevating and improving patient, resident and guest satisfaction through the foodservice experience. Patient satisfaction surveys are now given after someone visits a healthcare facility and concern for high scores are prompting healthcare facilities to focus on food nutrition, gourmet offerings and the ability to deliver hot food anywhere in the facility. However, as more operators are reviving menu mix, managing food costs has proven difficult. Healthier products and ingredients continue to have a significant impact on product selection and menu design, yet coupled with increasing food prices and decreasing budgets, foodservice directors are faced with having to do more with less.
