Created in collaboration with Campbell's Foodservice, this delicious Moussaka flatbread is a shareable Mediterranean fusion dish that taps into trending flavors. Topped with tangy tomato sauce, shredded mozzarella, roasted eggplant and savory turkey crumbles, it’s sprinkled with chopped parsley for a fresh finish.

Campbell's Tomato Basil Soup, frozen1cup

Fresh eggplant, sliced lengthwise12oz

Flatbread, 6 x 68flatbreads
Skim mozzarella, shredded4oz
Turkey, crumbled6oz
Fresh parsley, chopped0.125oz

 

Procedure

 

Prepare the sauce and toppings

  1. Heat the frozen tomato soup according to the manufacturer’s instructions.
  2. Add in milk and heat the mixture to 165 F.
  3. Preheat oven to 350 F.
  4. Combine garlic, eggplant and oil in a mixing bowl.
  5. Spray a sheet pan with nonstick cooking spray and evenly spread the eggplant mixture on the pan.
  6. Bake for 15 minutes until the eggplant is lightly browned, then slice into 1-inch sections.
     

Assemble the flatbread

  1. Spread 2 tablespoons of tomato basil soup evenly over each flatbread.
  2. Top with 1 oz of roasted eggplant.
  3. Top with 2 tablespoons of shredded mozzarella cheese and a #24 scoop of crumbled turkey.
  4. Bake the flatbread for 7 minutes at 350 F. For ovens with uneven temperature, rotate the pan after 4 minutes to brown the flatbread more evenly.
  5. Remove the flatbread from the oven and let it stand for at least 1 minute.
  6. Garnish with ½ tsp of chopped parsley.
